Irish Dexter cattle are a breed believed to have originated from the Irish Kerry cattle of Southwest Ireland in the early 19th century.  Dexters are naturally small cattle, not bred down from the larger breeds as miniatures have been.  They are the smallest of the breeds that are not classified as miniature.  They are known for their gentle disposition and their ability to forage on less desirable vegetation.  Due to their size they are particularly suited to small acreages

Little Oak Farm consists of 11 acres of prairie-like land in North East Texas.  We purchased the farm in 1997. It is located on a wet weather tributary of Willow Oak Creek in Hunt County creatively named Little Oak Creek, hence the name Little Oak Farm. At the time we purchased the property it was being used to graze calves during the growing season.  The land had been farm land some time in the past.  It had been over grazed and both the soil and fences were in poor condition.  We spent the next five years improving the soil and replacing fences.   Along with most other cattle farmers in North Texas we have endured drought conditions that were extensive during 2011, and to a lesser degree three of the previous five years. 

The snow storms of early 2011 were followed by severe drought for the balance of the year.
